GENERAL OBJECTIVE
To develop prebiotic and probiotic plant matrices in granulated powder form, with high protein quality and antioxidant capacity, made from Andean cereals, tumbo pulp, and microbial cultures.
GENERAL OBJECTIVE
1. To develop the preformulation and formulation of three prototype plant matrices in granulated powder form, made from seven Andean cereals, tumbo pulp, and microbial cultures of Lactobacillus and Bifidobacterium.

2. To develop, on a pilot scale, prototypes of three formulated plant matrices in granulated powder form, made from seven Andean cereals, tumbo pulp, and microbial cultures of Lactobacillus and Bifidobacterium, and evaluate their physicochemical and microbiological quality.

3. To evaluate the functional viability and chemical-nutritional composition of the three formulated plant matrix prototypes.
